Red Star® Cote des Blanc Wine Yeast

Selected from a French cultivar, Cote des Blanc is one of the most traditional and aromatic strains for white wines. An excellent choice for fruity whites or sweet wines. Produces low to medium roundness with low structure, making it ideal for wines where delicate fruit character is the focus.

Flavor Profile

Fruity and aromatic — promotes medium-high acetate esters and medium-high ethyl esters with promotion of thiols and C13 norisoprenoids. Sensitive but excellent settlement.

Best Suited For

Sauvignon Blanc, Muscat, Riesling, Gewürztraminer, Chardonnay, and other fruity white wine varieties.
