Lalvin K1™ (V1116) Wine Yeast
Selected by INRA Montpellier in France in the Mediterranean region. When fermented at low temperatures (below 16°C / 61°F) and with the right addition of nutrients, K1™ (V1116) is one of the highest ester-producing wine yeasts available, generating fresh floral aromas (isoamyl acetate, hexyl acetate, phenyl ethyl acetate). These esters bring fresh floral aromas to neutral varieties or high-yield grapes. The most resistant strain in difficult fermentation conditions such as low turbidity, low temperature, and low fatty acid content. Also a proven strain for ice wine fermentation.
Flavor Profile
Flowery ester — banana and fresh red fruit — with vibrant floral aromatics that shine in neutral or high-yield grape varieties.
Best Suited For
