It is considered by many as the world standard for a fine noble aroma hop. Since 1952, Saaz has been cultivated into nine separate clones, the last being in 1993. Its exceptionally high Farnesene content (14–20%) and very low alpha give it a refined, complex character — the defining hop of Czech Pils and a cornerstone of the noble hop tradition worldwide.

Aroma & Flavor Profile

Citrus, cream caramel, woody aromatic, floral, spicy — bergamot, honey, woody, chamomile tea, spicy.

Style Guide

Czech Pilsner

German Lager

Hefeweizen

Belgian Saison

Analysis

Alpha: 2.5–4.5%

Beta: 4.0–6.0%

Cohumulone: 23–26% of Alpha Acids

Total Oil: 0.4–0.8 ml/100g

Myrcene: 25–40% of Total Oil

Humulene: 15–30% of Total Oil

Caryophyllene: 6–9% of Total Oil

Farnesene: 14–20% of Total Oil

Linalool: 0.4–0.6% of Total Oil

Total Polyphenols: 5.5–7.0%

Origin

Czechia
